Spring onions, also referred to as salad onions, scallions or green onions are very young onions harvested at an early age before the bulb has had a chance to swell. They belong to the same family as garlic, leeks, shallots and chives
Onions have been used as a food stuff since prehistoric times and were cultivated by the Egyptians, Romans and Greeks. Spring onions are referred to in Chinese literature dating back over two thousand years. They are a good source of vitamin C and folic acid, and are relatively high in flavonoids that can help protect against cancer and heart disease. They are a versatile vegetable that can be cooked for example in stir fries and also eaten raw in salads. Both the green leaf and white bulb are edible.
